Sabudana khichdi – Indian meal

Sabudana khichdi is an Indian meal prepared during several Indian holidays, especially on Navaratri. It is the most popular comfort food made for folks of all ages. This delicious meal comes together in a flash.

HOW TO MAKE IT:

* Rinse the tapioca beads to remove excess powdered starch and leave them to soak for several hours, preferably overnight. Then drain the water from them and let the beads drip completely.

* Boil the potatoes not completely softly, let them cool down, peel them and cut them into cubes. Chop roasted peanuts. Mix the dripped tapioca beads with chopped peanuts and salt.

* Heat oil in a deeper pan and fry cumin in it for 1-2 minutes. Then add the chilli pepper and sauté for about 30 seconds. Sprinkle with sliced potatoes and fry for another 2 minutes.

* Then add the tapioca and continue stirring until the tapioca becomes transparent. Finally, drizzle with lemon juice, sprinkle with fresh coriander and serve immediately.

Note: It is important to soak the tapioca and then dry it well, otherwise, it will form “rubber” dumplings when roasted.

It has many variations, you can add curry leaves, grated ginger, coconut, sugar etc.

It is an easy recipe and a good recipe to be made during fasting days, because of its health benefits.
